Chocolate Mousse
A delicious, light dessert that is the perfect complement to any French-themed meal. Can be made with semisweet or bittersweet chocolate, according to taste.
Preparation time: 30 minutes + 4 hours refrigeration
Serves 6 to 8
Ingredients
- 200 grams (7 ounces) superior-quality bittersweet chocolate, finely chopped
- 140 grams (5 ounces) unsalted butter, cut into small pieces (may be omitted)
- 4 eggs, separated
- 250 ml (1 cup) whipping cream
- 35 grams (1 ¼ ounces) caster sugar (super fine sugar)
Directions
- Place chocolate pieces in a bowl placed over a saucepan of simmering water until the chocolate has melted. Add the butter, stirring until a smooth mixture is obtained. Allow to cool to lukewarm.
- Incorporate the egg yolks into the chocolate mixture, stirring well. Transfer to a larger bowl.
- Beat the egg whites until stiff peaks are obtained. Continue to beat while gradually adding the sugar.
- Very gently fold the beaten egg whites into the chocolate mixture, taking care not to overmix.
- Fill serving dish or ramekins and refrigerate at least four hours before serving.
