Chocolate Mousse

A delicious, light dessert that is the perfect complement to any French-themed meal. Can be made with semisweet or bittersweet chocolate, according to taste.

Preparation time: 30 minutes + 4 hours refrigeration
Serves 6 to 8

Ingredients

  • 200 grams (7 ounces) superior-quality bittersweet chocolate, finely chopped
  • 140 grams (5 ounces) unsalted butter, cut into small pieces (may be omitted)
  • 4 eggs, separated
  • 250 ml (1 cup) whipping cream
  • 35 grams (1 ¼ ounces) caster sugar (super fine sugar)

Directions

  1. Place chocolate pieces in a bowl placed over a saucepan of simmering water until the chocolate has melted. Add the butter, stirring until a smooth mixture is obtained. Allow to cool to lukewarm.
  2. Incorporate the egg yolks into the chocolate mixture, stirring well. Transfer to a larger bowl.
  3. Beat the egg whites until stiff peaks are obtained. Continue to beat while gradually adding the sugar.
  4. Very gently fold the beaten egg whites into the chocolate mixture, taking care not to overmix.
  5. Fill serving dish or ramekins and refrigerate at least four hours before serving.
