Sadaharu Aoki

Japanese-trained pastry chef Sadaharu Aoki arrived in France from Tokyo in 1991.

Since then, he has established himself as one of Paris’s finest pastry chefs, creating exquisite pastries that combine simplicity, beauty and sublime flavours.

After spending time at Jean Millet and Pierre Couderc pâtisseries, Chef Aoki worked for several years from his own atelier, creating elegant pastries for Paris’s upscale tea rooms, restaurants and hotels.

He opened his first patisserie and chocolate shop in the 6th arrondissement in 2001. Today he has three pastry shops in Paris as well as a boutique at Lafayette Gourmet (Galeries Lafayette department store). His pastries are also featured at Toraya, a Japanese tea room near place de la Concorde.

At Sadaharu Aoki’s shop you’ll find many classic French pastries with a distinctly Japanese twist. For example there’s the delicate millefeuilles with azuki or mâcha cream fillings, or the sesame, wasabi, mâcha or yuku macarons–in addition to a full rainbow of colours and classic fruit favours.

Chef Aoki also makes wonderful chocolate. His tablettes, or bars, come in spicy dark chocolate, milk chocolate with ginger, dark chocolate with green tea and sesame. And his chocolate truffles are infused with mâcha powder, white or black sesame paste, caramel or cognac.

“I like to create simple things, but it is the most difficult thing to do, since simple things cannot be manipulated,” Chef Aoki writes on his website.

He achieves this very well.

Sadaharu Aoki now has shops in Japan and Taipei.
