Religieuse Chocolat, La Pâtisserie de Cyril Lignac

La Pâtisserie by Cyril Lignac opens in Paris

Celebrity French chef Cyril Lignac has just opened a pâtisserie in the heart of Paris’s 11th arrondissement, just across from his restaurant Le Chardenoux.

Named La Pâtisserie by Cyril Lignac, the shop is a collaboration between Chef Lignac and former Fauchon pastry chef Benoît Couvrand.

Together they offer modern adaptations of traditional french pastries and cakes, as well as breads, viennoiseries and light lunch fare.

House specialities include classics such as the religieuse (chocolate, salted butter caramel, mango-passion fruit and caramelia), the éclair (coffee, chocolate, gianduja and dried fruit, salted butter caramel) and the Paris Brest.

The selection of breads includes a variety of baguettes, whole grain breads and speciality breads like olive, cheese and raisin breads.

Cyril Lignac, whose cooking shows are featured on French television channel M6, opened his first restaurant in Paris, Le Quinzième (15th arr), in 2005. Since then, he has run Le Chardenoux as well as Le Chardenoux des Prés (6th arr).

He previously worked with Alain Passard, Alain Ducasse, Pierre Hermé and Jacques and Laurent Pourcel.

Benoît Couvrand, formally trained as a “pâtissier, confiseur, glacier,” worked as pastry chef for Fauchon from 2001 to 2011 alongside Christophe Adam at the company’s flagship store on place de la Madeleine.

La Pâtisserie, which opened November 19, features a 32 square-metre shop and an 80 square-metre “laboratory,” where recipes and techniques are developed.

Update: In March 2016, Cyril Lignac opened a dedicated chocolate shop on rue de Chanzy (11th arrondissement).

  1. Paris pastry chefs are even more innovative than fashion designers. Always a new one opening up in Paris! Pastry is an affordable luxury and fashion is often not or a spontaneous decision these days…
