Since his arrival in Paris from Tokyo in 1991, Sadaharu Aoki has established himself as one of Paris’s top pastry chefs and chocolatiers.
His creations artfully combine the aesthetics and flavours of traditional Japanese confections with classic French pâtisserie.
Chef Aoki has won numerous awards both in France and Japan. He was recently awarded 5 bars by the prestigious Club des Croqueurs de Chocolat in its 2012 guide to the best chocolatiers in France. Gault & Millau magazine named him one of the top 5 pastry chefs in France in its ranking of best pastry chefs for 2012.
For this holiday season, Chef Aoki has created a collection of six colourful bûches de Noël and a magnificent chocolate-covered panettone!
Chocolat Praliné is composed of chocolate sponge, dacquoise, crispy praliné, praliné cream, milk chocolate cream, orange cognac and a chocolate macaron.
Mâcha Azuki features chocolate sponge, dacquoise, crispy praliné, green tea cream, red bean paste and a green tea macaron.
Panettone de Noël is covered in dark chocolate decorated with candied fruit, nuts and chocolates.
The four other bûches de Noël in this year’s Christmas collection are: Bamboo (dark chocolate ganache, green tea cream), Sensuelle (milk chocolate, raspberry), Saya (white chocolate, pistachio) and Japon (Kirsch, strawberries, crème Chantilly).
