Delectable Duos for Valentine’s Day

La Maison du Chocolat master chef Nicolas Cloiseau has created five new ganache and praliné flavour pairings for Valentine’s Day.

These exotic fruit and spice flavour “duos” are selected for both contrast and complementarity, reflecting harmony, passion and tenderness, according to the chocolatier.

Pictured below are: Peppery vanilla, dark chocolate ganache and almond-hazelnut praliné with spicy Jamaican pepper and Bourbon vanilla from Madagascar; Peru-Ecuador, a dark chocolate ganache that pairs the acidulous notes of cacao from Peru with the more floral notes of cacao from Ecuador; Woodsy Caramel, a dark chocolate ganache with an infusion of bois bande (Richeria grandis) and the rich flavour of caramel; Zesty Litchi, a milk chocolate ganache pairing tangy raspberry and the sweetness of litchi; And finally, Galanga Lemon, silky almond praliné featuring galanga root (ginger family) and fresh lemon.
