Sébastien Gaudard opened Pâtisserie des Martyrs on the former premises of the historic Pâtisserie Seurre in December 2011.
The bright, light-filled store offers an impressive variety of delicious viennoiseries, pastries, cakes, petit fours, artisanal ice cream, handmade chocolates and candied fruit.
Chef Gaudard, who trained as a pâtissier, glacier, chocolatier and confiseur, previously worked at Fauchon alongside Pierre Hermé. He eventually succeeded the latter as Fauchon’s head pastry chef, a job he held for eight years.
Later, he opened the Délicabar (now closed) at the Bon Marché, where he quickly became known as the “petit prince” of pâtisserie.
