Hugues Pouget and Sylvain Blanc opened their ultra-modern luxury chocolate shop and pâtisserie on the Left Bank in March 2010.

In very atypical fashion the pastries are displayed in glass cases like expensive jewels and the chocolates are sold in Moleskine notebook-type boxes.

But that’s not all — the displays feature wine recommendations to accompany the chocolates and pastries.

Innovative pâtissier and chocolatier Hugues Pouget formerly worked as executive pastry chef at Guy Savoy, and before that at spent time at Ladurée and Le Bristol.

His partner Sylvain Blanc previously worked in marketing for Barry Callebaut chocolate, then as senior manager at Le Printemps, where he was in charge of the luxury and accessories department.

The two friends decided to combine their experience and create something entirely new — and they have.

Hugo & Victor creations feature three “star” flavours year-round — chocolate, vanilla and caramel — in addition to five “transient” flavours that change with the seasons.

A second shop was opened near the Marché Saint-Honoré in December 2010.

  1. Great chocolate, wonderful packageing. I bought 23 box’s of this delicious,beautiful chocolate during my spring visit to Paris. The small boxes traveled well and were a big hit when I gave them away as gifts upon my return to Los Angeles.
