Pierre Marcolini

The multi-talented Belgian chocolatier Pierre Marcolini set up his first shop in Paris in 2003.

In his “haute couture” boutique on rue de Seine you’ll find more than 60 varieties of bonbons infused with exotic scents and flavors that will take your taste buds around the world.

For example there’s Baies Roses,”a bitter ganache flavored with Moroccan pink pepper berries,” Thé au Citron,” a bergamot infusion combined with fresh lemon and lime zest,” or “Caraïbe Grand Cru,” a bitter 72 per cent ganache flavored with vanilla pods from Madagascar/Tahiti.”

Marcolini was named Premier Belgian Ice Cream Confectioner in 1991, World Pastry Champion in 1995 and European Pastry Champion in 2000.

In 2009 Marcolini opened a second shop in Paris, on rue Scribe.

Speciality: “Calin Fondant” – chocolate-covered almond flour crisps with Tahitian vanilla
