Summer desserts: Les tartes glacées

A la Mère de Famille, Paris’s oldest sweet shop, is offering some refreshing frozen desserts for the summer season.

Head pastry chef Julien Merceron has taken some classic French desserts and substituted their fillings with the company’s famous artisanal ice cream and sorbets (among the best in Paris!)

Chef Merceron’s “tartes glacées” come in four delicious flavours: framboise crumble, featuring raspberry sorbet, raspberry jam and pistachio crumble; vanille praliné, filled with vanilla ice cream and topped with caramelised almond and hazelnut bits; tarte chocolat craquant, featuring an intense dark chocolate sorbet, chocolate coulis, and crunchy morsels of chocolate; and tarte citron meringuée, a zesty lemon parfait with pieces of candied lemon and lime, topped with Italian meringue.

All of these yummy fillings sit atop a buttery pâte sablée crust.

Chef Merceron’s tartes glacées are available as individual tarts (single portion) or larger ones (8 servings).
