Master chocolatier, pâtissier and glacier Gilles Marchal apprenticed with chocolatier and pastry chef Claude Bourguignon in the Lorraine region before heading to Paris, where he worked at prestigious establishments such as Le Crillon, the Plaza Athénée and Le Bristol.
In 2007, he succeeded Robert Linxe, founder of La Maison du Chocolat, as creative director of the legendary Paris chocolate shop.
In November 2014, Gilles Marchal launched his own gourmet pâtisserie in the heart of Montmartre. Specialities include single-origin chocolate tarts, rum babas, caramels, fruit jellies and jams.
